In the second immersion for 2 to 3 hours, the sugar concentration was reduced to 18% or less, and then the sugar concentration was adjusted to 32%. After the third immersion for 3 to 4 hours, the concentration of the sugar solution was reduced to 24% or less, the concentration of the sugar solution was adjusted to 36%, and the immersion was continued for 8 hours before cooking was performed. In general, the amount of sugar used per 100 kg of melon strips is 90 kg. 7 boiled.
