In 2001, the total output reached 63.339 million tons, accounting for 27.2% of the world's total meat production. The per capita meat consumption was 50.54 kg, which is significantly higher than the global average of 38.51 kg. However, despite this impressive output, the total amount of meat processed remains low—less than 10% of the total production—and the level of processing is still quite basic. Additionally, only a tiny fraction of the meat produced is exported, less than 1%. The modernization of the meat industry largely depends on the development and improvement of meat processing machinery. Without advanced equipment, it is impossible to talk about rapid development in the modern meat food industry. The growth of the meat food sector is the result of collaboration between processing equipment and technology. The cooperation between equipment and processes is essential, as innovation in equipment can drive improvements in processing methods, and vice versa. This mutual development is crucial for the industry’s progress. Currently, there are fewer than 3,000 meat processing enterprises in China, with total assets reaching nearly 40 billion yuan. Since the 1980s, over 200 enterprises in 21 provinces have imported more than 200 sets of meat processing machinery from abroad. These machines have played a significant role in improving China’s meat processing capacity, product diversification, and modernization. However, these technologies are still not sufficient for a country with a population of 1.3 billion and a large-scale meat production industry. As the backbone of the meat processing industry, the equipment sector faces many challenges. Despite some development in the meat processing machinery industry over the past decade, the situation remains far from ideal. For example, at the "Second Meat Processing Machinery" trade fair in 1994, fewer than 10 companies participated, but now the number has grown to over 100. Yet, the manufacturing capabilities of these companies are still limited. Most of them are technologically backward, with annual production and sales below 1 million yuan, and some even operate as “three-no” enterprises—without permits, quality control, or trademarks. This has led to market chaos, price wars, and poor-quality products. The industry lacks coordination, and competition is often disorganized. It is difficult to identify who is truly competitive when everyone is fighting for their own space. This fragmentation hinders integration, concentration, and technological advancement. To address these issues, the logistics and equipment departments of the meat processing industry must take responsibility. They need to regulate themselves, promote self-discipline, and strive for improvement. To catch up with global standards, the following questions need to be addressed: First, how can we quickly establish industry norms and standardize our meat processing machinery? Second, how can we create an effective industry management organization—such as a chamber or association—to implement supervision and regulation? Third, how can we organize the current enterprises by region, and encourage the development of Chinese brands like Stork, Polyka, and Huntman, while promoting healthy competition? Fourth, how can we systematically absorb and digest foreign meat processing technology through state agencies and industry associations? Only through these steps can the industry move forward, reduce the gap, and build a stronger, more efficient meat processing sector.
